- 1 1/4 cups quick-cooking oats
- 1 cup unbleached all-purpose flour
- 1/2 teaspoon baking soda
- 1 pinch salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1 egg
- 2/3 cup strawberry and raspberry jam
Préparation
- Preheat the oven: Place the oven rack in the center and preheat to 375°F (190°C).
- Prepare the molds: Line 12 muffin cups with paper or silicone liners.
- Mix the dry ingredients: In a bowl, combine the oats, flour, baking soda, and salt.
- Cream the butter: In another bowl, cream the butter with the brown sugar until light and fluffy.
- Incorporate the egg: Add the egg to the mixture and mix until smooth.
- Combine the dry ingredients: Gradually mix in the dry ingredients at low speed.
- Divide the dough: Split the dough in half, placing half in the bottom of each mold, making slight indentations.
- Add the jam: Spoon jam into the indentations.
- Cover with remaining dough: Crumble the remaining dough over the jam.
- Bake: Bake for 16 minutes or until golden but still tender.
- Cool: Let the molds cool before serving.
