Description

Ingrédients

  • 1 1/4 cups quick-cooking oats
  • 1 cup unbleached all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 pinch salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1 egg
  • 2/3 cup strawberry and raspberry jam

Préparation

  1. Preheat the oven: Place the oven rack in the center and preheat to 375°F (190°C).
  2. Prepare the molds: Line 12 muffin cups with paper or silicone liners.
  3. Mix the dry ingredients: In a bowl, combine the oats, flour, baking soda, and salt.
  4. Cream the butter: In another bowl, cream the butter with the brown sugar until light and fluffy.
  5. Incorporate the egg: Add the egg to the mixture and mix until smooth.
  6. Combine the dry ingredients: Gradually mix in the dry ingredients at low speed.
  7. Divide the dough: Split the dough in half, placing half in the bottom of each mold, making slight indentations.
  8. Add the jam: Spoon jam into the indentations.
  9. Cover with remaining dough: Crumble the remaining dough over the jam.
  10. Bake: Bake for 16 minutes or until golden but still tender.
  11. Cool: Let the molds cool before serving.
