Ingrédients

ÉCHELLE
  • 1/4 cup butter
  • 1 finely chopped onion
  • 2 tablespoons flour
  • 2 cups milk
  • 1 can (28 oz) crushed tomatoes
  • Fresh herbs (parsley, chives, celery leaves, thyme, and basil)
  • Salt and pepper to taste

Préparation

  1. In a pot, melt the butter over medium heat.
  2. Sauté the onion for about 5 minutes until translucent.
  3. Sprinkle the flour and stir for 30 seconds.
  4. Gradually add the milk while whisking continuously.
  5. Bring to a boil, stirring constantly.
  6. Add the crushed tomatoes and continue cooking, stirring, until it bubbles.
  7. Season with fresh herbs, salt, and pepper.
  8. Blend until smooth.
