Fougasse aux Olives

Ingrédients

ÉCHELLE
  • 1 1/4 cups water
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons salt
  • 2 teaspoons sugar
  • 1 tablespoon herbes de Provence
  • 3 1/2 cups bread flour
  • 2 teaspoons yeast
  • 2/3 cup sliced black olives

Préparation

  1. Combine all ingredients in a mixing bowl (except the olives).
  2. Set the bread maker to the ‘dough’ setting.
  3. When the timer alerts (around 1:23), add the olives.
  4. If the dough is too sticky, add a bit more flour.
  5. Remove dough and let it rest for 10 minutes.
  6. Roll the dough into 3 or 4 circles about 8-10 inches in diameter.
  7. Make incisions on each circle to create the fougasse design.
  8. Let the circles rise for about 45 minutes.
  9. Brush with olive oil.
  10. Preheat oven to 425°F and bake for 12-15 minutes.
