Description

Delicious grilled eggplant tartines topped with goat cheese and arugula, perfect for a quick lunch or dinner.


Ingrédients

ÉCHELLE
  • 1 baguette or rustic country bread
  • 1 eggplant
  • 150 g fresh goat cheese (or log)
  • 1 handful of arugula
  • 2 tablespoons olive oil
  • 1 garlic clove (cut in half)
  • Fresh basil leaves (optional)
  • Salt and pepper to taste
  • A drizzle of honey (optional)

Préparation

  1. Prepare the eggplant: Wash and cut it into thin slices.
  2. Season: Brush eggplant slices with olive oil, then season with salt and pepper.
  3. Grill: Grill eggplant slices on a pan, in the oven, or on the grill for about 3–4 minutes on each side until golden and tender.
  4. Toast the bread: Lightly toast the slices of bread.
  5. Rub the garlic: Once the bread is toasted, rub each slice with the garlic cut.
  6. Assemble: Generously spread goat cheese on each slice of bread, top with grilled eggplant slices, and add a handful of arugula.
  7. Finish: Season with pepper and drizzle with honey or add some basil leaves if desired.
  8. Serve: Enjoy warm or at room temperature, perfect with a green salad or cherry tomatoes.

Notes

These tartines can be made ahead. Grill the eggplant and prepare everything, then assemble when ready to serve.
