Description
Delicious grilled eggplant tartines topped with goat cheese and arugula, perfect for a quick lunch or dinner.
Ingrédients
ÉCHELLE
- 1 baguette or rustic country bread
- 1 eggplant
- 150 g fresh goat cheese (or log)
- 1 handful of arugula
- 2 tablespoons olive oil
- 1 garlic clove (cut in half)
- Fresh basil leaves (optional)
- Salt and pepper to taste
- A drizzle of honey (optional)
Préparation
- Prepare the eggplant: Wash and cut it into thin slices.
- Season: Brush eggplant slices with olive oil, then season with salt and pepper.
- Grill: Grill eggplant slices on a pan, in the oven, or on the grill for about 3–4 minutes on each side until golden and tender.
- Toast the bread: Lightly toast the slices of bread.
- Rub the garlic: Once the bread is toasted, rub each slice with the garlic cut.
- Assemble: Generously spread goat cheese on each slice of bread, top with grilled eggplant slices, and add a handful of arugula.
- Finish: Season with pepper and drizzle with honey or add some basil leaves if desired.
- Serve: Enjoy warm or at room temperature, perfect with a green salad or cherry tomatoes.
Notes
These tartines can be made ahead. Grill the eggplant and prepare everything, then assemble when ready to serve.
