A simple yet delicious pasta dish with juicy sausages, crunchy zucchini, and a spicy creamy sauce that everyone will love.
Ingrédients

- 300 g rigatoni or other short pasta
- 250 g Italian or smoked sausages
- 1 medium zucchini, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 200 ml thick fresh cream
- 150 g tomato sauce (passata or crushed)
- 50 g grated Parmesan cheese, plus more for serving
- 1 tablespoon olive oil
- 1/2 teaspoon smoked paprika
- 1 pinch Espelette pepper (optional)
- Salt and pepper to taste
- 1 ladle pasta cooking water (optional, to adjust the sauce)
- Fresh parsley, chopped for garnish
Préparation
- Prepare the ingredients: Heat a large pot of salted water to boil and cook the pasta according to package instructions. Drain, reserving a ladle of the cooking water.
- Start with the sausages: Meanwhile, slice the sausages into thick pieces, wash and slice the zucchini into half-rings. Finely chop the onion and garlic.
- Brown the sausages: In a large skillet, heat the olive oil over medium heat. Add the sausage slices and brown them for 4-5 minutes. Remove and set aside.
- Add onion and garlic: In the same skillet, add the chopped onion and garlic, and sauté until translucent (about 2 minutes). Add the zucchini, smoked paprika, and Espelette pepper if desired. Season with salt and pepper, and cook for 5 minutes.
- Return the sausages: Add the sausages back into the skillet with the vegetables. Pour in the tomato sauce and mix well. Let simmer for 3 minutes.
- Incorporate the creamy magic: Stir in the fresh cream, season again with salt and pepper, and mix. Let it simmer on low for 5 minutes.
- Combine pasta and sauce: Toss the drained pasta directly into the skillet with the sauce. Add a ladle of pasta cooking water if the sauce seems too thick.
- Finish with cheese: Sprinkle grated Parmesan cheese and mix until the pasta absorbs the sauce well. Serve immediately garnished with fresh parsley and a bit more Parmesan.
Notes
For a vegetarian version, use chicken, tofu, or legumes instead of sausages. Feel free to substitute zucchini with spinach or bell peppers. You can also add more vegetables to your liking.
