How to Make Hurricane Cake

Ingredients:

  • Génoise:

    • 4 eggs at room temperature
    • 120 g sugar
    • 100 g flour
    • 30 g melted butter
    • A pinch of salt
  • Chocolate Mousse:

    • 200 g dark chocolate
    • 3 eggs
    • 30 cl heavy cream
    • 80 g sugar
  • Decoration:

    • Fresh fruits (raspberries, strawberries, mango)
    • Cocoa powder
    • Chocolate shards

Directions:

  1. Prepare the Génoise:
Preheat your oven to 180°C. Beat the eggs and sugar together until the mixture triples in volume. Sift in the flour and gently fold it in along with the warm melted butter and salt. Pour this batter into a buttered and floured mold and bake for 25–30 minutes. Let it cool afterward.

  2. Prepare the Chocolate Mousse:
Melt the dark chocolate. Separate the egg yolks from the whites. Mix the yolks with the melted chocolate. Beat the egg whites until stiff peaks form, and gently fold them into the chocolate mixture. Whip the cream with 80 g of sugar until it forms soft peaks, then carefully fold it in as well.

  3. Montage:
Cut the génoise into two equal discs. Place the first disc in a mold, spread half of the chocolate mousse on top, then add the second disc and cover it with the remaining mousse. Smooth the top.

  4. Refrigeration:
Chill the cake in the refrigerator for at least 4 hours or overnight.

  5. Decoration:
When you are ready to serve, decorate the cake with fresh fruits, a sprinkle of cocoa powder, and chocolate shards.
