How to Make Charlotte Kinder

Ingredients

  • 30 ladyfingers
  • 100 grams semi-skimmed milk (10 cl)
  • 20 grams cocoa powder (sweetened, like Benco)
  • 2 pots of mascarpone (2 pots of 250g, cold)
  • 20 cl of thick cream (cold)
  • 2 teaspoons vanilla extract
  • 100 grams icing sugar
  • 120 grams dark chocolate
  • 40 grams heavy cream
  • 2 eggs
  • 20 grams granulated sugar
  • 1/2 sheet of gelatin (1g)
  • 50 grams dark chocolate
  • 100 grams heavy cream
  • Kinder Surprise chocolates (opened and halved)
  • Various types of Kinder chocolates (about 20 mini formats: Kinder Country, Kinder Bueno white and dark, Schoko-Bons, etc)

Directions

  1. Prepare Biscuits: Quickly dip each ladyfinger in the milk and lay them out in a round springform pan to form the base of your Charlotte.

  2. Make Mascarpone Cream: In a large bowl, mix the cold mascarpone and vanilla extract until smooth. In a separate bowl, whip the cold thick cream until soft peaks form, then gently fold it into the mascarpone mixture.

  3. Prepare Chocolate Mousse: Melt the dark chocolate with the 40 grams of heavy cream in a bowl over simmering water. Let it cool slightly. In another bowl, beat the eggs and sugar until fluffy. Mix the melted chocolate into the egg mixture, and fold in the beaten cream until combined.

  4. Assemble the Charlotte: Spread half of the mascarpone cream over the ladyfingers. Layer the chocolate mousse on top, then add another layer of mascarpone cream. Finally, top with a layer of ladyfingers.

  5. Prepare Chocolate Glaze: Melt the 50 grams of dark chocolate and 100 grams of heavy cream together until smooth. Pour this glaze over the completed Charlotte, making sure to cover it well.
