Description
A delicious and easy recipe for avocado toast topped with soft-boiled eggs and seeds, perfect for breakfast.
Ingrédients
ÉCHELLE
- 2 slices of country bread
- 1 ripe avocado
- 2 eggs
- Juice from 1 lemon
- 1 tablespoon of seeds (sunflower, pumpkin, flax…)
- A pinch of sweet paprika or chili flakes
- Salt and pepper to taste
- A drizzle of olive oil
Préparation
- Bring a saucepan of water to a boil. Gently add the eggs and cook for 6 minutes. Remove and place in a bowl of cold water to stop cooking. Peel gently.
- Cut the avocado in half, remove the pit, and mash the flesh with a fork. Add lemon juice, salt, and pepper to taste.
- Toast the slices of bread until golden and crispy.
- Spread the mashed avocado generously on the warm bread, then cut the eggs in half and place them delicately on top. Sprinkle with seeds, add paprika or chili flakes, drizzle with olive oil, and a pinch of salt.
Notes
For added flavor, rub the warm bread with a clove of garlic before adding the avocado.
