Description

A sweet and savory chicken dish cooked in a slow cooker, combining juicy chicken thighs and pineapple for a delightful flavor experience.


Ingrédients

ÉCHELLE
  • 1 tbsp cornstarch
  • 1/4 cup chicken broth
  • 2 tbsp ketchup
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 2 tbsp pineapple or apricot jam
  • 2 lbs boneless, skinless chicken thighs, cut into pieces
  • 2 tbsp olive oil
  • 2 cups fresh or canned pineapple, cut into small pieces
  • 4 green onions, sliced (white and green parts separated)
  • 1 tbsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup sugar snap peas, cut into thirds
  • Salt and pepper to taste

Préparation

  1. Prepare the sauce: In a bowl, mix cornstarch with chicken broth. Then add ketchup, soy sauce, rice vinegar, brown sugar, and pineapple or apricot jam. Mix well and set aside.
  2. Sear the chicken: Heat a large skillet over high heat and brown the chicken pieces in hot oil, in small batches. Season with salt and pepper to taste.
  3. Transfer to the slow cooker: Once browned, move the chicken to the slow cooker and move on to the next step.
  4. Add the pineapple and aromatics: In the same skillet, brown the pineapple and the white part of the green onions with ginger, adding a little oil if necessary. Incorporate the garlic and continue to cook for one minute.
  5. Combine everything: Deglaze with the prepared sauce and let it simmer for a minute before pouring everything over the chicken in the slow cooker.
  6. Let it simmer: Cover and cook on low for about 240 minutes.
  7. Add the vegetables: After 240 minutes, stir in the red bell pepper, sugar snap peas, and the green parts of the onions. Mix well, cover again, and cook for another 30 minutes.
  8. Adjust and serve: Adjust seasoning to taste and serve hot, ideally over a bed of rice. Enjoy!
