Description
A decadent and easy-to-make vanilla crème brûlée that will impress your friends.
Ingrédients

- 500 ml de crème liquide entière
- 5 jaunes d’œufs
- 100 g de sucre
- 1 gousse de vanille
- Cassonade (sucre roux) pour caraméliser
Préparation
- Infuse the cream: In a saucepan, pour in the cream and split the vanilla bean in half. Scrape the seeds and add them to the cream. Warm gently, but do not boil, allowing it to infuse for 10 minutes.
- Whisk the yolks: In a bowl, beat the egg yolks with the sugar until smooth and homogeneous.
- Mix the ingredients: Remove the vanilla bean from the cream, and gradually pour the warm cream into the yolk mixture while stirring.
- Bake au bain-marie: Preheat your oven to 150°C (300°F). Distribute the mixture into ramekins and place them in a dish filled with hot water. Bake for 35 to 40 minutes.
- Cool: Let the ramekins cool at room temperature, then refrigerate for at least 2 hours.
- Caramelize: Just before serving, sprinkle with cassonade. Use a torch or your oven’s grill to caramelize the surface until crispy.
Notes
Don’t use low-fat cream; full cream is essential for this dessert.
