Description

A delicious and easy pineapple upside-down cake made in a slow cooker, combining juicy pineapple, vibrant cherries, and a sweet caramel topping.


Ingrédients

  • 2 tablespoons melted butter
  • 1/3 cup packed brown sugar
  • 1/2 medium pineapple, peeled and sliced into 10 rings
  • 1/2 cup chopped pecans (optional)
  • Cherries (for decoration)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup softened butter
  • 1/2 cup white sugar
  • 1 beaten egg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk or milk

Préparation

  1. Prepare the pineapple: In a small bowl, mix the melted butter with the brown sugar and spread this mixture in the bottom of your slow cooker. Place the pineapple slices on top and add pecans if desired.
  2. Mix the flour: In a large bowl, sift together the flour, baking powder, baking soda, and salt.
  3. Cream the butter: In another bowl, cream the softened butter with the white sugar until smooth and creamy. Add the beaten egg and mix well.
  4. Incorporate the liquid: In a separate bowl, mix the lemon juice, vanilla, and buttermilk (or milk). Add this mixture to your flour preparation, alternating with the butter mixture, whisking at each step.
  5. Pour the batter: If you’re feeling adventurous, add zest of orange then spread this batter over the pineapple slices in the slow cooker.
  6. Prepare for cooking: To prevent the batter from becoming too wet, cover the top of the slow cooker with two clean dish towels before placing the lid on.
  7. Cook: Cover and cook on HIGH for about 180 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool and flip: Allow the cake to cool for 15 minutes, then gently flip it onto a serving plate. Serve it with whipped cream or frozen yogurt, depending on your mood!
