Description

Delicious grilled bread topped with eggplant, tomatoes, and melted cheese for a satisfying meal.


Ingrédients

ÉCHELLE
  • 1 baguette or 2 individual breads
  • 1 large eggplant
  • 2 to 3 ripe tomatoes or homemade tomato sauce
  • 150 to 200 g of melting cheese (mozzarella, emmental or a mix)
  • 2 cloves of garlic
  • Olive oil
  • Salt and pepper
  • Herbs of choice (thyme, oregano or basil)

Préparation

  1. Slice the eggplant into thin rounds.
  2. Heat the olive oil in a pan and sauté the eggplant with a pinch of salt.
  3. Prepare the baguette by cutting it in half lengthwise and rubbing garlic on each half.
  4. Spread a layer of tomatoes or tomato sauce on the bread, then add the sautéed eggplant.
  5. Add cheese generously on top and preheat the oven to 180°C.
  6. Bake for about 10 to 15 minutes, then broil for 2 to 3 minutes until golden brown.
  7. Serve the tartines hot, possibly with a drizzle of olive oil or fresh basil.

Notes

Avoid under-salting the eggplant and remember to preheat the oven for best results.
