Description
Delicious grilled bread topped with eggplant, tomatoes, and melted cheese for a satisfying meal.
Ingrédients
ÉCHELLE
- 1 baguette or 2 individual breads
- 1 large eggplant
- 2 to 3 ripe tomatoes or homemade tomato sauce
- 150 to 200 g of melting cheese (mozzarella, emmental or a mix)
- 2 cloves of garlic
- Olive oil
- Salt and pepper
- Herbs of choice (thyme, oregano or basil)
Préparation
- Slice the eggplant into thin rounds.
- Heat the olive oil in a pan and sauté the eggplant with a pinch of salt.
- Prepare the baguette by cutting it in half lengthwise and rubbing garlic on each half.
- Spread a layer of tomatoes or tomato sauce on the bread, then add the sautéed eggplant.
- Add cheese generously on top and preheat the oven to 180°C.
- Bake for about 10 to 15 minutes, then broil for 2 to 3 minutes until golden brown.
- Serve the tartines hot, possibly with a drizzle of olive oil or fresh basil.
Notes
Avoid under-salting the eggplant and remember to preheat the oven for best results.
